Skinny Bread Pudding




Originally I found a version of the recipe from the Weight Watchers website. Bread pudding is one of my personal favorites but usually the dessert is packed full of butter, sugar and white bread. With a couple easy switch-outs bread pudding is super easy to make healthy!


Ingredients:
6 ish slices of whole wheat bread (of your choice)
nonstick spray
2 eggs
2 egg whites
2 cups fat free milk
1 cup sugar substitute
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp vanilla extract
1/2 cup raisins or craisins*
1 cup fresh peaches*

*I've added nuts, blueberries, strawberries and just about any other fruit to this recipe, anything works!

Preparation:

1. Spray a bread baking dish or a casserole dish. Cut bread into cubes and disperse into the pan.
2. Combine eggs, egg whites, milk, sugar substitute, cinnamon, nutmeg, vanilla.
3. Add raisins and fruit of choice and stir gently
4. Pour mixture over the cubed bread
5. Bake at 325 degrees for 1 hour or until golden brown and the knife comes out clean
