This is so healthy and so delicious! I got this recipe from once upon a chef. Website is super awesome!
Ingredients:
For the Dressing
1/4 cup honey
1/4 cup vegetable oil (I didn't add this)
1/4 cup unseasoned rice vinegar
1 teaspoon Asian sesame oil (I used asian salad dressing instead)
1 tablespoon peanut butter
1/2 tsp salt
1/2 teaspoon Sriracha sauce
1 tablespoon minced fresh ginger (I used spice)
1 large glove garlic minced
For the Slaw
4 cups prepared shredded coleslaw
2 cups prepared shredded carrots
1 red bell pepper cut into bite size pieces
1 cup cooked and shelled edamame
2 medium scallions (I didn't use this)
1/2 cup chopped salted peanuts
1/2 cup loosely packed chopped fresh cilantro
Preparation:
1. Make the dressing by combining all the ingredients in a medium bowl. Stir until the peanut butter is dissolved. Set aside.
2. Combine all the slaw ingredients in a large bowl. Add the dressing and toss. Let sit for about 10 minutes so that the vegetables can soak up the dressing. Taste and adjust. Serve cold.
