Deep Dark Cookies

Delicious Deep Dark Cookies

1 1/2 cups bittersweet chocolate chips
3 large egg whites, room temperature
2 1/2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/4 teaspoon salt
1. Preheat oven to 350 degrees F. Spray 2 large baking sheets with nonstick spray.
2. Melt 1 cup of chocolate chips in glass bowl in microwave. Stir twice total time about 2 min.
3. Using electric mixture beat egg whites until soft peaks. (foams up) Then gradually beat 1 cup sugar on medium speed until mixture resembles marshmallow fluff.
4. Add additional cup of sugar, cocoa, cornstarch, and salt on medium speed.
5. Stir in lukewarm chocolate and 1/2 non-melted chocolate chips.
6. Place 1/2 cup of powdered sugar in bowl. Round balls of dough and coat them in the sugar before placing them on the cookie sheet.
7. Cook them for about 10 minutes or until they puff and crack. Allow time to cool and enjoy!
Makes about 18 tablespoon size dough balls.
