Blondie Bars Gone Healthy!




The best healthy recipes are certainly dessert recipes. I have the worlds most insane sweet tooth (I blame my grandmother who used to slip me york peppermint patties when my mom wasn't looking). Regardless I now have a constant need for something sweet after any meal (even breakfast). These bars are truly healthy and delicious which in most cases is an oxymoron. I found this recipe from a young girls blog: "Chocolate Covered Katie" she has tons of healthy dessert recipe alternatives to tons of butter and sugar.


Ingredients:
1 1/2 cups chickpeas (1 can rinsed and drained)
3/4 tsp baking powder
1/8 tsp baking soda
level 1/4 tsp salt
3/4 cup brown sugar or coconut sugar
2 tsp vanilla extract
1/4 cup ground flax or quick oats
1/4 cup peanut butter
optional (not in my case): 1/2 cup dark chocolate chips

Preparation:

1. Preheat oven to 350 degrees & grease an 8 x 8 pan
2. Mix all ingredients except for chocolate chips into a food processor until blended smooth
3. Stir in chocolate chips and spread the batter evenly into the pan.
4. Bake bars for 30 minutes. *

*the bars after 30 minutes may seem sort of gooey in the center but don't worry they will firm up once they cool.
