Sunday Peanut Butter Muffins


These muffins have just a hint of peanut butter and although they do call for oil it isn't too much. They turn out much fluffier than other versions of healthy muffins. And the whole wheat flour tastes great!



Ingredients:

1 1/2 cups whole wheat flour
1/4 cup brown sugar
2 tsp baking powder
1/4 tsp baking soda
1 egg
3 ripe bananas
2 tablespoons peanut butter
1/3 cup vegetable oil

Preparation:
1. Heat oven to 350 degrees
2. Mix dry ingredients together in bowl
3. In another bowl stir mashed bananas, egg, peanut butter, and oil.
4. Add liquid ingredients to dry and place in 12 muffin liners
5. Bake for approximately 20 minutes.
