Peanut Butter Energy Bites


I was first introduced to these by my good friend Tenisha, after I gave birth to Lucy. They were the perfect thing that made night-time feedings bearable. Since then I can't get enough. I make a batch of these at least a couple times a month and they are gone super quick. I've played with the recipe so much and you can pretty much add anything to them! These are relatively healthy.. lots of protein!

Ingredients:
1/2 cup peanut butter
1/3 cup honey
1 cup old fashioned rolled oats (or quick oats)
1/2 cup shredded coconut (I use unsweetened)
1/3 cup walnuts (or nut of choice)
1/2 cup chopped chocolate (or chocolate chips)
1/2 teaspoon cinnamon
1 teaspoon vanilla

Preparation:
Melt peanut butter in a small bowl
combine all ingredients in large bowl
form into small balls and refrigerate for 30 minutes

Then hold yourself back because they are addicting. 

**I've also added Chai Seeds and a scoop of protein powder !
